Ingredients
Scale
Produce
- ½ cup roasted beet cubes (about 1 small beet)
- 1 cm fresh ginger, peeled and grated
- ½ medium banana, previously frozen
Frozen Fruits
- 1 cup frozen mixed berries (strawberry & raspberry blend)
Dairy
- ½ cup plain Greek yogurt (2% fat)
Pantry
- 1 cup 100% orange juice, divided
- 1 Tbsp almond butter
- 1 Tbsp ground flaxseed
- 1 tsp pure maple syrup (optional)
Other
- ¼ cup cold water (only if needed for blending)
Instructions
- Prep the flax: Add the ground flaxseed and ¼ cup of orange juice into the blender and let it sit for 2 minutes. This allows the flaxseed to soften and release its nutrients for better blending and absorption.
- Add remaining liquids: Pour in the rest of the orange juice along with the plain Greek yogurt, almond butter, and optional maple syrup into the blender to create a creamy base for your smoothie.
- Top with frozen ingredients: Add the roasted beet cubes, frozen mixed berries, frozen banana, and freshly grated ginger on top of the liquid mixture. These ingredients give the smoothie its vibrant color and powerful antioxidant content.
- Blend: Start blending on low speed for 15 seconds, then increase to high speed for 45 seconds until the mixture is smooth and uniformly magenta in color. If the blender struggles or the mixture is too thick, add up to ¼ cup cold water to help it blend evenly.
- Taste & tweak: Sample your smoothie and adjust the sweetness or brightness as desired by adding extra pure maple syrup or a squeeze of lime juice to enhance flavor balance.
- Serve: Pour the smoothie into a chilled glass, garnish with a few frozen berries for visual appeal, and enjoy immediately to maximize nutrients and the refreshing glow effect.
Notes
- Roasted beet cubes can be prepared in advance by roasting beets at 400°F for about 40 minutes until tender.
- Freezing the banana beforehand improves the texture and chill of the smoothie without diluting flavor.
- Adjust the thickness by adding water gradually if the blender struggles or you prefer a thinner smoothie.
- Optional maple syrup can be omitted for a lower sugar version.
- For a vegan variation, substitute Greek yogurt with a plant-based yogurt alternative.
