  • 2 cups instant brown rice

Instructions

  1. Brown the turkey: In a large skillet over medium heat, cook and brown the lean ground turkey, breaking the meat up into small pieces with a spatula until fully cooked and no longer pink.
  2. Add seasoning and liquids: Stir in the taco seasoning mix, water, jarred salsa, and canned corn with bell peppers. Bring the mixture to a boil over medium heat, stirring occasionally.
  3. Cook the rice: Stir in the instant brown rice, then simmer on medium heat for 5 minutes. Cover the skillet with a tight-fitting lid and turn off the heat, keeping the skillet on the burner. Allow the dish to stand undisturbed for 15-20 minutes so the rice absorbs the liquid and becomes tender.
