Truffle Mixture
- 1 cup white chocolate chips (180 g)
- 1/4 cup butter (60 g)
- 1 big pinch salt
- 2 tbsp lemon zest (from 2 lemons)
- 3 tbsp heavy whipping cream
- 1 tsp vanilla paste or extract (optional)
- 2-3 drops yellow food coloring (optional)

- 1/4 cup powdered sugar for rolling
Instructions
- Prepare Chocolate Base: Place the white chocolate chips in a medium mixing bowl and set aside.
- Heat Cream Mixture: In a small saucepan, melt the butter along with the pinch of salt and lemon zest. Stir in the heavy whipping cream and heat the mixture until it is almost boiling. Pour this hot cream mixture through a fine-mesh sieve directly over the white chocolate chips to ensure smoothness. Add the vanilla paste or extract and optional yellow food coloring, then stir until the mixture is fully smooth and homogenized.
- Chill Mixture: Cover the bowl containing the truffle mixture and refrigerate it for 30 minutes to 1 hour, or until the mixture firms enough to be shaped into balls.
- Shape Truffles: Using a spoon or small scoop, take heaping teaspoonfuls of the chilled mixture and gently roll each portion into a smooth ball with your hands.
- Coat Truffles: Roll each formed ball in powdered sugar to coat evenly. Place the coated truffles on a tray or plate.
- Final Chill: Refrigerate the powdered sugar-coated truffles for at least 30 minutes so they set properly before serving. Enjoy chilled.
