- 2 cups raw almonds
- 1/2 cup unsweetened coconut flakes
- 1/2 cup raw pumpkin seeds
- 1/2 cup raw cacao nibs
- 1 tbsp cinnamon
Wet Ingredients
- 1/3 cup raw honey
Instructions
- Prepare dry mixture: Add the dry ingredients including raw almonds, coconut flakes, pumpkin seeds, cacao nibs, and cinnamon into a food processor or blender and pulse for about 1 minute until they are roughly combined but still chunky.
- Spread mixture: Evenly spread the pulsed dry mixture onto a baking sheet to create a single layer.
- Add honey: Pour the raw honey evenly over the nuts and seeds on the baking sheet.
- Incorporate honey: Use a silicone spatula to gently fold and press the honey into the nut and seed mixture, ensuring it begins to cling and coat them well.
- Bake clusters: Place the baking sheet in a preheated oven at 350°F (175°C) and bake the mixture for about 30 minutes, tossing and turning the nuts a couple of times during baking for even toasting and caramelization.
Notes
- Use silicone spatula to avoid scratching the baking sheet.
- Keep an eye on the baking clusters to prevent burning during tossing.
- Allow the clusters to cool completely before breaking into pieces for best texture.
- Store in an airtight container to maintain freshness and crunch.
