These Chocolate Almond Clusters are a delicious and nutritious snack featuring a blend of raw almonds, coconut flakes, pumpkin seeds, cacao nibs, and a hint of cinnamon, all lightly sweetened with raw honey and baked to perfection for a crunchy, flavorful treat.

  • 2 cups raw almonds
  • 1/2 cup unsweetened coconut flakes
  • 1/2 cup raw pumpkin seeds
  • 1/2 cup raw cacao nibs
  • 1 tbsp cinnamon

Wet Ingredients

  • 1/3 cup raw honey


Instructions

  1. Prepare dry mixture: Add the dry ingredients including raw almonds, coconut flakes, pumpkin seeds, cacao nibs, and cinnamon into a food processor or blender and pulse for about 1 minute until they are roughly combined but still chunky.
  2. Spread mixture: Evenly spread the pulsed dry mixture onto a baking sheet to create a single layer.
  3. Add honey: Pour the raw honey evenly over the nuts and seeds on the baking sheet.
  4. Incorporate honey: Use a silicone spatula to gently fold and press the honey into the nut and seed mixture, ensuring it begins to cling and coat them well.
  5. Bake clusters: Place the baking sheet in a preheated oven at 350°F (175°C) and bake the mixture for about 30 minutes, tossing and turning the nuts a couple of times during baking for even toasting and caramelization.
