Ingredients
Scale
Rice
- 3 cups day-old jasmine rice
Protein
- 8 oz beef, thinly sliced (or chicken, shrimp, or tofu)
Vegetables
- 1/2 cup peas
- 1/2 cup diced carrots
- 1/2 cup chopped bell peppers
- 1/2 cup broccoli florets (optional)
- 1/4 cup snow peas (optional)
- 1/4 cup corn kernels (optional)
Sauce
- 1/4 cup mayonnaise
- 2 tablespoons sweet chili sauce
- Sriracha to taste
Others
- 1 tablespoon oil (for sautéing beef)
- 1 tablespoon oil (for frying vegetables and rice)
- Chopped green onions for garnish
Instructions
- Prepare the Rice: If using freshly cooked rice, spread it out on a baking sheet and let it cool for about 30 minutes to dry out. Day-old rice is preferred to prevent sogginess during frying.
- Make the Bang Bang Sauce: In a small bowl, combine 1/4 cup mayonnaise and 2 tablespoons sweet chili sauce. Stir well until smooth. Add sriracha according to your preferred spice level.
- Sauté the Protein: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the beef and cook for 4-5 minutes until browned and fully cooked. Remove beef from the pan and set aside.
- Cook the Vegetables: In the same pan, add 1 tablespoon of oil. Stir-fry peas, carrots, bell peppers, and any optional vegetables like broccoli, snow peas, and corn for 3-4 minutes until tender-crisp.
- Add the Rice: Push vegetables aside, add a splash of oil if needed, and add the day-old rice. Break up any clumps and stir-fry with the vegetables for 2-3 minutes to ensure it’s heated through and starts to crisp slightly.
- Combine Everything: Return the cooked beef to the pan. Pour in the Bang Bang sauce and mix thoroughly to coat all the ingredients. Cook for an additional 2-3 minutes, stirring occasionally to blend flavors and warm through.
- Garnish and Serve: Remove from heat. Serve the Bang Bang Fried Rice hot, garnished with chopped green onions. Optionally, serve extra Bang Bang sauce on the side for added flavor.
Notes
- Using day-old rice is key to prevent mushy fried rice.
- Feel free to swap beef for chicken, shrimp, or tofu based on preference.
- Adjust sriracha to make the dish as mild or spicy as you like.
- Vegetables can be varied; use whatever you have on hand for flexibility.
- Make sure your pan or wok is hot enough to achieve a nice sear and stir-fry texture.
